I wanted to pass along some of my absolute favorite vegan recipes that have been tried and tested in my very particular kitchen (a 6-year old and a
committed meat-eater can attest to the yum factor.)
Pecan Mushroom Burgers
Every time I make these everyone has seconds. Good on a bun or by itself, this veggie burger sticks together and tastes delish. Thanks to Dreena Burton for perfecting this recipe!
Brownies
Who doesn’t love brownies?! When you go vegan you are always looking for ways to bake without the usual eggs, butter, etc. I found these brownies and they are amazing. Dense, chewy, chocolately, moist. Caveat: they are finicky. The baking time is very touch and go. (Definitely NOT the 25-30 the recipe says.) A minute too long and these turn dry yet sticky like taffy. Not good. Better to cook less than more. I replaced some sugar with Truvia, and if you’ve ever baked with stevia you know that you also have to reduce cooking time. So try them out, and keep a close watch on them. Flour Tortillas
As a born and raised AZ girl, I heart Mexican food. If you’ve ever had an ultra fresh, just off the griddle tortilla from a true Mexican bakery, you’ll know what I’m talking about. I’ve been distraught since moving to PA, as the only “Mexican” food joint there is anywhere nearby is On The Border. Blech. So I bought a tortilla press (they’re only like $20 on Amazon) and found a great recipe and make these babies from scratch once a week. They really are super easy and so much better tasting than the preservative-laden packaged grossness found at the grocery store. My daughter salivates at these.
